Domaine de l'Abbaye de Santenay

Today, we are going to travel to the region of Bourgogne with a presentation of the Bourgogne, the discovered of an estate from Santenay and then a tasting party.

What's Bougogne region ?

The Bourgogne is a wine region which is located in the East of France. It represents an area of about 25 000 hectares in appellation . This region is divided in 5 parts which are : Chablis, Côtes de Beaune, Côtes de Nuits, Côtes Chalonnaise et Mâconnais, it contains in total 84 AOP, which we call « climates », whose regional appellations, communal appellations or villages with appellations Premiers Crus and Grands Crus. The 3 main grape varieties are Pinot Noir for red wines, Chardonay and Aligoté for whites wines.

Discovery and tasting :

The estate Santenay is a family estate created since 2002, located in the city of Santenay. This Estate is certified in organic since 2009 and which is in conversion to biodynamics.

Red wines of Bourgogne are made only with the Pinot Noir grape variety.

Those wines are with brigth ruby and intense dress into their younth , often with purples glints. In getting older, the dress become more and more pale, until has colors reminding the color of a brick.

At nose, we will have a diversity of flavors from reds fruits (black currant , cherry, strawberry, ...), with spicy notes (pepper, cinnamon, ...) and empyreumatic (coffee, smoked, ...). Over time, fruits will be confit (jam), and wines will develop flavors of undergrowth (fungus, truffle, ...) with more animal notes (leather).

In mouth, they will be rather round, with pronounced and harmonious tannins which will soften with time. Depending on the vintage, acidity will be more or less marked. The Pinot Noir will always keep a certain freshness even on the hottest years.
